3/4 cup pistachios, roughly chopped
1 1/2 cups cashews, roughly chopped
1/2 cup sunflower seeds
1/2 cup black chia seeds
1 teaspoon Celtic Sea salt
1 teaspoon cinnamon
1/4 cup cashew spread
1/3 cup honey
1 teaspoon vanilla extract
Lightly grease a 8x8 pan and line with non-stick baking paper.
Place the pistachios, cashew, and sunflower seeds, chia and cinnamon in a large bowl and mix to combine.
Place the cashew spread, honey and vanilla in a medium saucepan over medium heat. Cook, whisking, for 4-5 minus or until the mixture is bubbling. Working quickly, add the pistachio mixture and stir to combine. Pour the mixture into the pan and press down firmly, smoothing with the back of a spoon.
Refrigerate for 1 hour or until firm. Cut into bars.
