2 tablespoons coconut oil
1/2 of an onion, chopped
4 garlic cloves, chopped
3 tablespoons chili powder
4 cups filtered water
2 large carrots, peeled and chopped
1 sweet potato, peeled and chopped
1 6 oz can tomato paste
2 cups cauliflower, separated into bit sized pieces
4 - 8 oz pasta of choice
1 can of organic full fat coconut milk
Salt to taste
In a large kettle on medium heat, add coconut oil and onions. Cook for 3 minutes then add the garlic. Simmer until the onion and garlic are soft. Add chili powder and let cook for 1 minute, stirring to combine. Add the water, carrots, potatoes, and tomato paste, simmer until the carrots are soft. Add the cauliflower and pasta and cook until the pasta is done. Add a little more water if necessary but not too much as you will add the coconut milk at the end. Add coconut milk and salt to taste. Enjoy
