white bean dip

ingredients

1 cup great northern beans, soaked overnight with 1 tablespoon lemon juice or 1 can white beans, drained

2 teaspoons Celtic sea salt 

1 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 cup plus 1 tablespoon organic cold-pressed 

olive oil

juice of one organic lemon

method

After the beans have soaked overnight, drain and rinse well. Place the beans in a small saucepan and cover with filtered water. Bring to a boil and then reduce to a medium simmer for 30 minutes or until soft. Drain and place the beans in a food processor. Add salt, garlic powder, onion powder, olive oil, and lemon juice to the food processor and process for several minutes or until smooth. Add a bit more olive oil if you prefer a thinner consistency. Enjoy.
